Savory Pancakes Recipe

These fluffy, savory pancakes are a delightful twist on the classic breakfast favorite—perfect for a quick lunch, brunch, or even a light dinner! Packed with herbs, cheese, and optional veggies, they’re flavorful, easy to make, and endlessly customizable.

Ingredients:

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp fresh herbs (chives, parsley, or thyme), finely chopped
  • ¼ cup grated cheese (cheddar, parmesan, or your favorite)
  • 1 large egg
  • ¾ cup milk (dairy or plant-based)
  • 2 tbsp olive oil or melted butter
  • ½ small onion, finely chopped (optional)
  • ½ cup cooked vegetables (spinach, bell peppers, zucchini, etc.) (optional)

Instructions:

  1. Mix Dry Ingredients:
    In a large bowl, whisk together the flour, baking powder, salt, and pepper.
  2. Add Herbs & Cheese:
    Stir in the chopped herbs and grated cheese for extra flavor.
  3. Prepare Wet Ingredients:
    In another bowl, whisk the egg, milk, and olive oil (or melted butter) until smooth.
  4. Combine Wet & Dry Mixtures:
    Pour the wet ingredients into the dry ingredients and gently stir until just combined. A few lumps are fine—overmixing makes pancakes tough!
  5. Fold in Extras (Optional):
    If using, add chopped onions or cooked veggies and fold them into the batter.
  6. Cook the Pancakes:
    • Heat a non-stick skillet or griddle over medium heat and lightly grease with oil or butter.
    • Pour ¼ cup batter per pancake and cook for 2-3 minutes per side, until golden brown and cooked through.
  7. Serve & Enjoy!
    Serve hot with:

    • fried or poached egg on top for extra richness
